Years ago, one could travel throughout the South and fully experience the many culinary specialties the region had to offer.  This was due in large part to the uniquely satisfying eating experiences waiting in magical places such as Lafayette, Louisiana, Memphis, Tennessee, and Smithfield, Virginia.  Sadly, the proliferation of chain restaurants has all but choked the life out of the family-run diner, bbq pit, fish camp, rib joint and soul food shack.
