All breads are made using our natural leaven (sourdough starter), which was started in the mid seventies from organic wholemeal flour and water only, with which it gets fed every day. All of our breads are hand-shaped and baked in our original 1930's wood-fired oven, either in tins or directly on the brick floor of the oven. All are made from bio-dynamic,organic or unbleached flour, natural leaven (sourdough starter), water and sea salt. We do not add any yeast, sugar, fat, oil or improvers, etc
