'We're making Southeast Asian drinking food -- Indonesian, Thai, Vietnamese with a definite emphasis on Malaysian/Singaporean stuff. The structure of the menu is very Japanese izakaya, laid out the way food is cooked: grilled, boiled, steamed and fried, plus some noodles and some salads. We're drawing on shared traditions, but it's not a fusion place. Please don't call it Asian tapas! The food arrives in little plates because that's how it's really served.'
