LOLONIS WINERY
Winemaking begins with the handpicking of our grapes. Since the very first vintage in the early 1920s, when Tryfon, Eugenia and the eldest of their ten children picked the grapes, harvesting Lolonis vineyards has been a hands-on tradition. At harvest, grapes are selected for their flavor and maturity before undergoing the next crucial stage: crush. For white wines, the grapes are pressed as a whole cluster and the juice fermented under cool temperatures. Chardonnay is 100% barrel fermented and undergoes malolactic fermentation (MLF). Red wine grapes are de-stemmed and then fermented to extract maximum flavor and color prior to undergoing MLF. Lolonis wines are aged in French and/or American oak barrels. Our Estate wines are made to be accessible while still young and provide excellent value. Lolonis Private Reserve wines are produced from specific vineyard blocks that are carefully managed and are aged longer in separate barrels to ensure intense varietal character.
